- Since our foundation, we wanted Château Les Carrasses to be a distilled expression of the surrounding environment of garrigue and vines - a testament to thousands of years of coexistence between people and nature and living proof that humanity & the environment can and must go hand in hand.

Come and meet Marcello, Pacha and the other animals on our mini-farm. Goats, donkeys, ponies, lambs, hens, roosters, ducks and rabbits all live here in perfect harmony. Our farmer Mario is on hand to tell you about life on the farm and you can help him feed the animals in their pens and perhaps even give them a cuddle!

Our kitchen garden project is an exciting initiative to create a sustainable source of fresh, quality ingredients. By growing our own vegetables, herbs and fruit, we will be able to offer our customers a farm to fork experience, highlighting seasonal flavours and reinforcing our commitment to responsible, environmentally friendly eating.
At Château Les Carrasses the project is in development with the plan to be supplying the kitchen from 2025. For the moment our sister hotel 40 minutes away, Château St Pierre de Serjac is producing and supplying the four restaurants in the Domaine & Demeure collection from its established kitchen garden.
We consider ourselves temporary custodians of Château Les Carrasses : every aspect of the restoration has been carefully weighed to preserve and enhance the natural environment and rich architectural and social heritage of the Château, while simultaneously breathing new life into the estate, placing it once again at the heart of the local community.
This approach informs everything we do: from dry gardens to environmentally friendly pools, low emission equipment to organic waste treatment, ecologically friendly design and construction to chemical free cleaning and extensive use of home grown and local produce.
In your accommodation you will find recycling bins for packaging, glass and normal household waste. To help the reduction of single use plastics we are using Nordaq micro-filtered water and individual bathroom amenities have been replaced by larger eco-pumps.
Complimentary bicycles are available for you to explore the estate and surrounding area and Wallbox charging stations are available for electric cars.
In the restaurant, our chef works exclusively with local seasonal produce to further reduce our carbon footprint.
